Prepare a healthy lunch for a roommate or loved one


In those good old days, when we were still allowed to work outside our homes, it was often quite a challenge in the morning to get everything and everyone ready on time. During that rush hour, there was no time to think about lunch, let alone to prepare an extensive – healthy – lunch.
So around noon we improvised. Most of the times this meant quickly picking up a sandwich or fast food. Besides the fact that it is not the most healthy alternative, it is also not really cheap.
So what fun it would be to have a healthy and delicious lunch when your stomach starts to rumble?

Surprise one of your loved ones and prepare a lunch / a lunchbox for them. And don’t forget to add your “prepared with love” note.

But this is how I prepare a healthy salad in less than 5 minutes:
I make an extra portion of vegetables when preparing dinner. In the morning I pimp this up with extras such as arugula or spinach, feta or other cheese cubes, yogurt dressing, herbs, a hard-boiled egg, olives, pasta, quinoa or couscous, croutons, some nuts and other leftovers. Add in some healthy spelt crackers, if desired, and voila your healthy salad is ready.
